Labor and Pork

What are you doing for Labor Day?

Me, you ask?

Well, we are power washing the house,

ripping out our kitchen cabinets,

and eating BBQ with our church friends at a local park.

whew!  What a Monday!

On a side a note ~

This would be a great time to eat Pork Carnitas!

I used other people's recipes to create the amazing party-in-your-mouth dish.

Just look at this.



How could you resist this?


YOU. MUST. MAKE. THIS.

It's sooo easy!

Recipe for Pork Carnitas:


Salsas:


Garden Salsa:
4-5 roma tomatoes, chopped
1 jalenpeno, diced (I remove half of the seeds and membranes to reduce heat)
1/2 white onion, chopped
1/4 - 1/2 cup cilantro, chopped
1/2 lime, juiced
salt to taste
Mix all ingredients and adjust ingredients according to your tastes, if needed

Top Carnitas with sour cream, avocado, garden and tomatillo salsa.
You can eat these with or without tortillas.  You can use corn, flour, or whole wheat tortillas.
